When it rains in Korea, something switches. You don't decide to crave jeon — it just happens. — Jeon, the pancake Korea eats when the sky breaks open.

Call it a "Korean pancake" if you want. But jeon predates the pancake by centuries and carries significantly more weight — historically, it was food offered to ancestors during ancestral rites. You'd coat meat or seafood in flour and egg, fry it in oil, and place it on the ritual table. That's where jeon began: as an offering to the dead.

Then somewhere along the way, the living got involved. Every household made jeon for holidays, and it turned out the smell of jeon frying — oil hitting a hot pan, batter crisping at the edges — was nearly impossible to ignore. Kids started waiting for the rites to end not out of respect, but because the jeon was right there.

근데 그 엄숙한 음식이 어떻게 지금의 비 오는 날 술안주가 됐을까요? 간단합니다. 맛있었기 때문입니다. 집집마다 명절에 전을 부쳤고, 그 기름 냄새가 온 동네 퍼졌고, 아이들은 제사보다 전이 기다려졌습니다.

Today jeon means rainy afternoons and cold makgeolli. It means someone's mother in the kitchen, the sound of oil and batter, the comfortable silence that settles when food is almost ready. Koreans have a phrase for this mood — 비 오는 날 전 생각 — and it's not really about hunger. It's about rain turning an ordinary Tuesday into a reason to eat well.

Jeon is non-negotiable at Korean holidays. Chuseok, Seollal — the ancestral rite table isn't complete without it. For most of Korean history, though, making jeon was women's work. The night before the holiday, mothers, grandmothers, and aunts would crowd the kitchen and fry dozens of pieces while the men stayed out of the way. That's changing. Today it's not unusual to see fathers flipping pajeon, sons mixing batter, the whole household in the kitchen together. The jeon is the same. Who makes it has shifted — quietly, without anyone declaring it a movement.

And the rule that stolen pieces taste better than the ones served at the table? That part hasn't changed at all.

명절이 되면 전은 필수입니다. 추석이든 설이든, 차례상에 전이 없으면 뭔가 빠진 느낌이 납니다. 그런데 오래전엔 이 전 부치는 일이 전부 여자들 몫이었습니다. 명절 전날 밤, 엄마와 할머니와 이모들이 부엌에 모여 수십 장을 부쳤습니다.

The sound of rain on a Korean rooftop is not far from the sound of jeon in a hot pan. Your ears hear it; your stomach responds. There's a name for this feeling in Korean — 비 오는 날 전 생각 — and the only cure is jeon with makgeolli, ideally by a window.

The Rain Theory

One popular theory: the sound of rain on a rooftop sounds uncannily close to the sound of jeon sizzling in oil. Your ears hear it; your stomach responds. Add the documented craving for carbs and warmth on grey days, and the jeon impulse feels less like culture and more like biology.

비 소리(후두둑)와 기름에 전 부치는 소리(지글지글)가 비슷하게 들린다는 설이 있습니다. 청각이 식욕을 건드린 겁니다. 거기에 흐린 날 탄수화물이 당기는 생리적 반응까지 더해지면, 전은 그냥 선택 사항이 아닙니다.

The Makgeolli Equation

The jeon-and-makgeolli pairing traces back to rainy farming days, when rain meant no fieldwork — just staying inside, cooking with whatever was left in the pantry. The pairing also makes flavor sense: makgeolli's tart, creamy fizz cuts through the oil in jeon the same way a cold beer cuts through a burger.

Yukjeon is thinly sliced beef dipped in egg, pan-fried until just golden. And guljeon — a whole oyster coated in batter and fried — is criminally underrated outside Korea.

Holiday jeon isn't a solo operation — you need a crew. One person handles the batter, one lays out the ingredients, one flips, one transfers to the plate. Families who barely see each other all year end up standing shoulder to shoulder for a couple of hours. The jeon gets made. The conversation happens. That's the point.

Not All Jeons Are Equal

Making good jeon is a skill. Oil temperature, batter consistency, when to flip — get all three right and you get crisp outside, moist inside. Get one wrong and you get a soggy disc. In Korea, saying someone makes good jeon is essentially saying they can cook.

전 잘 부치는 것도 실력입니다. 기름 온도, 반죽 농도, 뒤집는 타이밍 — 이 셋이 맞아야 바깥은 바삭하고 안은 촉촉한 전이 나옵니다. 한국에서 "전 잘 부친다"는 말은 요리 잘한다는 말이랑 같은 뜻입니다.

How to Make

해물파전

Haemul Pajeon — Seafood & Green Onion Pancake

쪽파 or 대파 (큰 단) Green onions / scallions — cut to pan length
오징어 ½마리 + 새우 10마리 Squid + shrimp — frozen works fine; thaw and pat dry
달걀 1개 1 egg
부침가루 1컵 Korean pancake mix (Asian grocery) — sub: ¾ cup flour + ¼ cup rice flour
얼음물 ¾컵 Ice-cold water — colder = crispier, this is the key
식용유 (넉넉히) Neutral cooking oil — more than you think
양념간장 (곁들임) Soy sauce + rice vinegar + sesame oil + gochugaru

    Cut green onions to fit the pan length. Prep squid and shrimp into bite-sized pieces.

    파는 팬 길이에 맞게 자른다. 오징어와 새우는 한입 크기로 손질.

    Mix pancake mix with ice-cold water until you get a batter that drips slowly off a spoon. Don't overwork it.

    Heat a generous pour of oil in a pan over high heat. More oil than you think — this is the move.

    Lay green onions across the pan, pour batter over, arrange seafood on top, drizzle beaten egg over everything.

    Medium-high heat, 3–4 minutes. Don't touch it. Wait for the edges to look golden and set.

    Flip once. Press down firmly with a spatula. Cook 2–3 more minutes until deeply crisp on both sides.

Use ice water. Hot batter in hot oil goes soft. Cold batter hitting hot oil crisps like a fritter. This single choice separates good jeon from great jeon.
