제주 흑돼지 — 멸종 위기에서 살아 돌아온 품종
People assume the black pig tastes better because it's black. That's not how it works. The color is just genetics — a recessive gene that makes the coat dark and does exactly nothing to the flavor.
What actually matters is time. A Jeju black pig takes 8 to 10 months to reach slaughter weight. Commercial white pigs take 4 to 5. That extra time means more fat marbling, deeper muscle development, and a texture that holds up on the grill in a way industrial pork simply doesn't. The fat renders slowly. The skin crisps without burning. You can taste the difference in the first bite.
Here's the part nobody talks about: the Jeju black pig almost vanished. In the 1980s, when Korean agriculture modernized fast, faster-growing Western breeds flooded in. The native black pig couldn't compete economically — it grew too slowly, cost too much to raise. By the 1990s, the breed was nearly gone. It took a deliberate, government-backed breeding program on Jeju Island to pull it back. What you're eating today is a recovery story.
흑돼지가 맛있는 이유가 색 때문이라고 생각하면 오해다. 검은 털은 그냥 유전자다. 맛과 아무 관계없다.
진짜 이유는 시간이다. 제주 흑돼지는 출하까지 8~10개월이 걸린다. 일반 흰돼지는 4~5개월. 그 차이가 지방 마블링을 만들고, 근육을 단단하게 키운다. 불 위에 올렸을 때 지방이 천천히 녹으면서 껍데기가 바삭해지고, 육즙이 빠져나가지 않는다.
아무도 잘 안 하는 이야기가 있다. 제주 흑돼지는 사라질 뻔했다. 1980년대 한국 농업이 급격히 산업화되면서 성장이 빠른 서양 품종이 밀려들었고, 느리게 크는 흑돼지는 경제성이 없었다. 1990년대에는 품종이 거의 멸종 위기에 몰렸다. 제주도와 정부가 순종 복원 사업을 시작하면서 겨우 살아남았다.

Jeju 흑돼지 holds a Korean GI (Geographical Indication) status. The rest is just black-colored pork — and restaurants in Seoul will charge you the same price for it anyway. When you're in Jeju, that distinction matters.
현재 제주 흑돼지는 지리적 표시제(GI) 등록 품종이다. 제주에서 인증된 방식으로 사육된 돼지만 '제주 흑돼지'를 쓸 수 있다. 서울 식당에서 같은 가격에 파는 흑돼지는 대부분 다른 얘기다. 제주에서 먹는 이유가 여기 있다.

The Skin Is the Point
The skin — 껍데기 (kkeop-de-gi) — is served separately, grilled until blistered and chewy. Ordering samgyeopsal without kkeop-de-gi on the side is a known rookie mistake in Jeju.
껍데기는 별미다. 삼겹살 주문하고 껍데기를 빠뜨리는 건 제주 여행의 흔한 실수. 불에 구워 쫄깃해진 껍데기에 소금 참기름을 찍어 먹는다.
Not All Black Is Jeju
If a Seoul restaurant advertises 흑돼지 without the word 제주 (Jeju), it's almost certainly a mainland crossbreed — usually Duroc or Berkshire hybrids. Edible, sometimes good, but a different animal entirely.
서울 식당에서 '흑돼지'만 쓰고 '제주'를 안 붙이면 십중팔구 교잡종이다. 나쁜 건 아니지만 제주 흑돼지와 같은 품종이 아니다.
The Dip Changes Everything
On the mainland, pork belly goes with ssamjang. In Jeju, it goes with meljeot — fermented anchovy sauce, sharp and briny. Ssamjang rounds the fat; meljeot cuts through it. Once you've tried the Jeju way, there's no going back.
육지에선 삼겹살에 쌈장을 찍는다. 제주에선 멜젓을 찍는다. 쌈장이 맛을 감싸는 방식이라면, 멜젓은 맛을 열어주는 방식이다.

Meljeot (멜젓) is Jeju dialect for fermented anchovy sauce — lighter in color and sharper than its mainland counterpart, made from small anchovies caught in Jeju waters, fermented for months with little more than sea salt.
- 1Grill until fat blisters and edges char slightly.
- 2Pick up a slice. Dip briefly into meljeot — don't soak, just touch.
- 3Wrap in perilla with raw garlic, or eat straight. Either works.
The brine hits first, then the smoke, then the pork fat finishes long and clean. Meljeot's fermented amino acids amplify the umami without adding sweetness — which is exactly what the rich fat of black pork needs.
